Here's a basic recipe for fig jam:

Lemon Juice

Salt  Fresh Figs (1 pound, stemmed and quartered) (1 cup) Water (1/2 cup) (1 lemon) (a pinch) Recipe to Cook

Combine the sugar, water, lemon juice, and salt in a medium saucepan over high heat. Bring to a boil, stirring frequently. Add the figs and return to a boil. Cook for about 10 minutes, or until the figs are very soft and the mixture has thickened into a jammy consistency. Remove from the heat and let cool slightly.

Transfer the jam to a food processor or blender and pulse until smooth (or leave it chunky if you prefer). Taste and add more sugar or
